The Quiet Village Mai Tai Recipe:
1 oz. white rum
1 oz. dark rum
spash Demerara Rum 151 proof
1 oz. sweet n' sour
1/2 oz. orgeat (doulbe strength)
juice of 1/2 large lime

Fill rocks glass with crushed ice. Squeeze lime juice into glass, retain spent lime shell. Add remaining ingredients except demerara rum. Pour contents into larger glass or shaker and back into rocks glass to gently mix. Drop in spent lime shell. Float demerara 151 rum on top. Garnish with fresh mint and marichino cherry speared to pineapple wedge. Serve and enjoy while listening to the Quiet Village podcast.
